{Malai Barfi Recipe}

Ingredients

1 litremilk
1 1/2 tbsp lemon juice
1/4cup +1 tbsp sugar (moderately sweet
add more if you like sweeter)
1-2 pinch cardamom powder
1 tbsp ghee
Sliced almonds  for garnish

 Method:
Heat milk in a sause pan on high heat , when it comes to a boil lower the
heat to medium, take a milk in a ladle add juice to it , let it curldle t
hen mix it with remaining  milk to curdle it all.
Add another lemon juice. Stir out about 600 ml of whey . And cook for another 10 minutes on a medium flame,also stir from the bottom.
When the whey evaporates and milk solid remains add sugar, cardamom powder and cook until the mixture comes like a soft ball .
Add 1/2 tbsp ghee to the mixture mix it well switch of the flame . Use the remaining ghee to grease your plate you want to set your malai barfi on. Pat the mixture and press firmly from all side to shape it garnish it with almond  or silver foil (chandi ki vark)  and let it cool down .
