Raksha Bandhan special sweet{Malai Cake}πŸ’πŸ’

Malai cake is a soft and spongy cake soaked in sweetened in soaked milk.
It is indo western fusion dish ,flavoured  with saffron and garnish with chopped nuts and it is inspired by ras malai.

Ingredients:
_for cake
* 200ml curd(1/2 cup of curd)
*1 cup sugar
* 1/2 cup butter
*1 cup all purpose flour
*1 tsp baking soda
*1/4 cup Milk
* 1 tsp vanilla essence
_for malai
* 2 cups milk
* 1 can condensed milk
*Chopped pistachios, almond, cashews
*1/4 tsp saffron

Method:
1. In a wide bowl add curd and  1/2 cup of sugar, beat on medium speed for 2 to 3 minutes.
2.Add remaining 1/2 cup of sugar and beat until fluffy.
3.Add 1/2 cup of sofetened butter and combine well 
4. Now add 1 cup of all purpose flour and 1 tsp baking soda.
5.Cut and fold the batter until mixed well.
6. Now add 1/4 cup of milk mix gently.
7. Now pour the batter on greased pan.
8. Preheat the oven for 360 degree celcius and baked the cake for 50 minutes.

For malai:
In a pan add 2 cups of milk and boil. Add one can of sweetened milk and mix . Now add 1/4 tsp saffron and chopped nuts. Mix it well and keep aside.


Level the cake evenly.
Keep it in a container and prick it with a fork .
Add prepared malai .
Refrigerate for 1 hour. 
The soft spongy and your juicy cake is ready.πŸ˜‹❤
