Authentic maxican Rice


Ingredients:
2tbsp carrot
2tbsp cariander
2tbsp corn
3clove garlic
1/2 onion
2tbsp peas
1tomato
1cup - basmati rice
1 tbsp - pepper
1/2tbsp -salt
2 tbsp -oil
2cup - vegstock
1/2 capicum (chopped)

Method:
Rinse and soak rice in enough water for 15-20 min. Drain and set aside.
Heat olive oil in a pan on Medium heat once hot add red onion and cook for a min. Add chopped garlic and cook for another minute Add yellow corns and mix . Add cumin powder, salt, pepper
and mix.  Add the soaked rice to pan and saute for 2-3 min.  then add crushed tomatoes, vegetables or water and mix.  Lower the heat to medium cover the pan and cook for 10 min till the rice is soft and done . Remove the cover after 10 to 15 min. Add lime juice on top .
Serve vegetarian maxican rice as a side or main dish and enjoy.👌
