# Hot and sour soup
This is a spicy , sour , hot vegetable soup from indo chinese cuisine .
How to make hot and sour soup
*First rinse and shred the cabbage and fresh beans . Wipe a mushroom with a wet cloth and then slice them , rinse peels and grate the carrots and chop the ginger garlic onion
Add red or green cabbage.
Add one tablespoon oil in a pan
Add finely chopped onion garlic ginger
Stir and saute on medium flame for 3 minutes. Then add the finely chopped french beans and stir , add the slice mushrooms .
On a medium to high flame stir fry till the mushrooms get lightly brown from edges.
Meanwhile make a paste of corn starch and water , keep aside .
Once a mushroom is lightly brown take about five to six minutes on a medium to high flame add carrots cabbage and celery .
Stir fry on high to low flame for 5 to 6 minutes.
Add water or veg stock , stir well .
Add soya sauce and stir .
Then season with salt , bring the soup to a simmer on medium flame .
Stir the corn starch paste and add it to the soup stir again very well
Allow the soup to thicken on a medium flame .
Add black pepper , good quality chinese vinegar . Give the final stir
Serve your hot and sour soup...
