Shahi thandai recipe #holi special recipe

Shahi thandai or sardai is a milk based cold drink made especially during holi.
This delicious and cooling drink is nutritious and healthy.

 *twelve black peppercorns ( sabut kali mirch)
*1 1/2 tsp poppy seeds ( kush kush)
*1 tbsp fennel seeds (sauf)
* 1 tbsp melon seeds(magaz)
*10 cashews kaju
*25 almonds badamn
* 1 litre full fat milk
*1/2 cup sugar
*1/8 tsp elaichi powder
*4 or 5 drops saffron food  colour
*1-2drops rose essence.
Method:
For thandai masala mix sabut kali mirch , khus khus, sauf, magaz, kaju.
Soak all the ingredients in about 1/4 cup of water for 30 minutes.
Soak 25 almonds separately for 30 minutes. After 30 minutes peel the skin of almonds .
Grind the almonds and other soaked nuts and spices in a mixer jar to a smooth paste using water if needed .
Keep the thandai masala aside.
Boil milk in a pan and add sugar and elaichi powder.
Cook for 1-2 minutes and switch off the flame.
Add saffron yellow food colour and rose essence.
Add the thandai masala paste in hot milk and mix well.
When thandai comes to room temperature refrigerate for 4 -8 hours or overnight
After 8 hours give thandai a good mix and a strain.
Thandai is a best served chilled!
Refrigerate again until needed.
